Nutrition & Good Eating

Zucchini ala Kiki

One large garden zucchini
One small eggplant
Two large potatoes
One large onion
Two fresh tomatoes
Five cloves of garlic
1/2  cup olive oil ,
Sea salt and pepper to taste
1/3 cup dill
3/4 cup Parsley,
 
For topping:
One tablespoon olive oil , A cup of flavored bread crumbs , two cloves garlic, two tablespoons parsley and 1/4 grated cheese
 
Wash and clean veggies (zucchini, eggplant, potatoes, and tomatoes.)  Cut into small cubes.  Place cubes in a baking pan and add:  garlic, parsley, dill, onion, sea salt, pepper and 1/3 cup of water.  Mix all ingredients together.  Cover with silver foil and bake  at 350 degrees or 45 minutes -1 hour.

For topping:
In a frying pan place olive oil, garlic and parsley.  Sauté until brown.  Add grated cheese and bread crumbs.  Mix thoroughly and spread on the top of the baked zucchini.  Can eat hot, warm or cold.
