Macaroni Salad - Great Warm Weather Dish

INGREDIENTS:

  • 2 cups cooked macaroni (spiral pasta, elbow macaroni, or your choice)
  • 3 hard-boiled eggs, chopped
  • 1 cup diced celery
  • 1/4 cup shredded carrots
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped green olives
  • 1/2 cup grated apple or pear
  • 1 cup mayonnaise

 

Prepare the macaroni according to directions on the package.  Drain and place in a large bowl.  Add other ingredients.  Mix well and refrigerate until you are ready to serve.

This can be a great one-dish meal for a warm summer's night or a side dish with some grilled franks or hamburgers.
