Interesting Recipes for Thanksgiving

Thanksgiving is right around the corner.  The following are recipes given to me by my mother.  They're healthy and delicious and maybe somewhat different from what you've become accustomed to eating at a holiday dinner table.



 2  Yams

5 carrots

4 large parsnips

salt and pepper to taste

2 tablespoons margarine or butter


Peel yams, carrots and parsnips, cut into thin slices and place in a pot.  Pour in enough water to slightly more than cover the ingredients. Bring contents to a boil, then reduce heat and simmer for approximately 40 minutes or until all the vegetables are soft enough to mash.  Pour the vegetables into a strainer.  Mash the yams, carrots and parsnips together.  Add the butter or margarine, salt and pepper and your new, interesting vegetable dish is ready to eat.




4 apples peeled and sliced into thin pieces

3/4 cup raisins

1 teaspoon cinnamon

1 tablespoon orange juice

1 cup corn flake crumbs (make crumbs in blender) 

1/3 cup honey

3 tablespoons butter or margarine 


Place peeled and sliced apples into an 8-inch baking pan.  Place raisins over the apples.  In a separate bowl stir honey, orange juice and cinnamon together and place over the apples.  Melt butter or margarine and blend together with corn flake crumbs and sprinkle on top.  (You can substitute cookie crumbs or graham crackers for the corn flakes if you prefer).    Bake at 350 - 375 degrees for approximately 50 minutes, until apples are soft.  Serve hot with ice cream for a special treat.
