Authentic Greek Cooking - Yiayias Baked Green Lima Beans

2  pounds of frozen green Lima Beans
2  large ripe tomatoes
2  large yellow onions
5  cloves garlic
1/2 cup Greek virgin oil
1 cup chopped fresh parsley
1/4  cup chopped fresh dill
1 cup of vegetable or chicken broth (you can substitute water if you prefer)
Sea salt and pepper to taste
 

First , Chop onions, tomatoes, garlic, parsley and dill. 

Rinse the frozen green lima beans and place them in a baking pan. (Cook beans while frozen).  Mix beans together with chopped ingridients, sea salt and pepper.  Add water and olive oil. Cover with aluminum foil and bake in 400 degree oven for one hour , or until the liquid is absorbed.

 
Best served with Greek Feta Cheese, kalamata olives and cherry tomatoes or with any type of grilled meat or fish.
